I got a response from Martin Haake!! buzzing!! Because he got approached by the publisher he couldn't help me massively, but still gave useful advice! It just really confirmed that I need to approach publishers, he advised to start with one of my favourites. So I need to contact publishers rather than illustrators really... but my book isn't finished at all yet so I need to wait until it's finished then go crazy contacting!
